As many of you know, I work full-time at an engineering firm while attending
all sorts of events in Boston, writing freelance articles and maintaining my blog.
Between all of that, my workouts and social life, I do not usually have a lot of time
for much else most evenings (as mornings before heading to the office are for writing.)
So how do many of you make sure you have a healthy, yet delicious dinner on the
table for yourself, a significant other and/or roommates?
Just recently, Campbell‘s invited me to partner with them to try out their new
Skillet Sauces. A quick and easy way to prepare something flavorful.
I received the Marsala, Toasted Sesame with garlic and ginger,
Thai Green Curry with lemongrass and basil & Creamy Chipotle
with roasted corn and black beans sauces.
A bit rusty in the kitchen like myself? Not to worry – this recipe is literally
foolproof and I will show you why.
I began with the Marsala because of my affinity for mushrooms. I should not
have been so surprised, but Campbell’s actually has sliced mushrooms already in
the sauce. Not tiny nondescript pieces of some unidentifiable vegetable.
After browning my chicken breast, I stirred in the creamy marsala and lowered
the heat. Though most would be partial to having this over pasta, I chose to
put it over brown rice for a healthier option.
The few minutes I had left the chicken simmering in the sauce ensured the
chicken to be incredibly tender and I was delighted to detect a normal
if lower amount of sodium (something I am always conscious about!)
While most of the packets are around 40 calories in total, even the creamier
offerings do not surpass 70 and grams of fat are also surprising low.
This is definitely a solution for busy people who return home like myself and are a
bit too hungry to prepare something that takes more than 30 minutes
(I get hangry okay!?)
Not partial to frozen foods and attempting to remain on somewhat of a budget,
I am always looking for alternatives while in the kitchen. Well done Campbell’s!
