It has been a custom for years that if I am with my parents on a Sunday morning,
I make them breakfast – usually omelets or something fairly healthy.
During my recent stay I made sure to continue this tradition but used my
iPad to find a few updates to my usual omelet recipe.
I saute the vegetables first without the tomatoes so they don’t get too mushy.
Lastly, the egg!
Cosi’s Pesto Chicken Melt
A delicious pasta & chicken dish I had while on the Cape.
Lots of sauteed mushrooms, savory tomato in a light cream
sauce atop a bed of fettuccine.
