When I first visited Chocolate Therapy exactly one year ago, I left with more than a sugar high.
The delicious glow and warm fuzziness provided by one of a kind truffles that melted in my mouth had me dreaming of my next visit for over a week (should I be ashamed to admit that?)
More importantly, before visiting Chocolate Therapy I did not enjoy dark chocolate.
I now prefer it to all other available varieties. Is it perhaps due to the special percentage of cocoa CT uses or the fact they use Belgian chocolate as opposed to Swiss (or a combination of the two?)
Regardless, you are aware that this is pretty life-changing news if you’re any sort of foodie.
Pam and Dave do a wonderful job of incorporating snippets of cocoa history and interesting tidbits into each tasting, aiding every visitor in becoming even more of a chocolate connoisseur.

We quickly settled into the important part, the tasting.
We swirled, sniffed and swished four complimenting wines from a Spanish Pinot Grigot
to a limited edition California Merlot, delicate Sherry and the most delicious Zinfandel
taking bites of bread in between to cleanse our palettes.
After each sip, we took a nibble of chocolate while the wine remained in our mouths,
creating the most unexpected and exciting pops of flavor imaginable.

The chocolates and wines were exceptional on their own, but paired with their carefully selected counterpart, the two became infinitely better. It was mind-blowing.
The snootiest participant of the bunch who had asked pointed questions seemingly
doubtful turned out to be CT’s second biggest fan (yours truly being the first of course.)
Though I was sworn to secrecy at the time, Pam and Dave were in the final stages of crafting the worlds largest chocolate goat for the infamous Beekman Brothers – literally setting world history!
The craftsmanship was breathtaking as each detail was evident, painstakingly shaped by a sculptor.

Ever the creatives, owners Pam and Dave are always thinking up delicious and
inventive ways to craft one of a kind chocolate from incorporating
sweet potatoes (I cannot wait for these) and even goat cheese.
After near begging, we were allowed to sample the exclusive and not yet released goat cheese blend which I of course enjoyed eyes closed, lacking any and all shame.
I even made a friend! Marie of Chocolate & Wine (how fitting for her to attend) and I became fast friends, commiserating over the “blogger struggles” HAH..I hope you see the irony there.
